The Secretly Healthy Veggie Tikka Masala πŸ²πŸ…πŸŒΏπŸŒΆ

This dish is Loaded with vegetables πŸ₯— and full of flavor with superfood Coconut Oil 🍢

It is nut free, butter free, soy free, gmo free, made with all organic ingredients, vegan (optional). πŸ›πŸŒΏ

Prep the Veggies –

  1. 1 small cauliflower, cut into florets
  2. 2 medium potatoes, cooked and chopped into cubes πŸ₯”
  3. 1 cup peas, fresh or frozen
  4. 1 medium onion, chopped
  5. 2 cups of crushed, canned tomatoes πŸ…

Step – lightly sautΓ© cauliflower, potatoes, peas and onion in a pan on medium heat, set aside 🍲

Ingredients for the Tikka Masala –

  1. 2 cups of crushed, canned tomatoes πŸ…
  2. 2 tablespoons coconut oil
  3. 2 teaspoons cardamom powder
  4. 1 teaspoon red paprika (2 teaspoons for a spicier taste) 🌢
  5. 3 garlic cloves, chopped or 2 teaspoons dry garlic powder
  6. 2 teaspoons dry ginger powder
  7. 2 teaspoons turmeric powder
  8. 1.5 teaspoon dry coriander powder
  9. 1.5 teaspoon dry cumin powder
  10. 1.5 cup organic coconut milk or 1 cup fresh sour cream
  11. 1 tablespoon raw agave
  12. Salt per taste
  13. 1/2 cup fresh chopped chives

Steps –

1. Warm coconut oil in a large pot over medium heat. Add crushed tomatoes and stir frequently for about 5 minutes

2. Add turmeric, coriander, cumin, ginger, garlic, cardamom and paprika until they mix well (for about 3 minutes)

3. Add prepped veggies, coconut milk ( or sour cream for a dairy option) and agave syrup, salt.

4. Let the curry simmer, stirring occasionally, for 10 minutes.

5. Garnish with chives

Tikka masala 🍲 is ready in less than 20 minutes cook time. 🍡 serve with steamy rice 🍚 or Indian bread like Chapati, Paratha, Naan 🍲 🌿

Side dish idea – Picked raw onion

Ingredients – 1. 1 small onion chopped in slices

2. 2 teaspoons Any Pickle from India

Step – mix in the onion slices with the pickle and set aside to marinate for 10 minutes.

This curry is versatile and the veggies can be replaced by another protein of choice πŸ₯˜ 🌢 😊
